Tasty tuna bake
I would always receive a "dunno" from Aisyah whenever I asked what she wants for breakfast the night before. It's even more frustrating when you have a kid who is a very fussy eater. Besides the internet, I would always visit the library and scour the books for inspirations (btw, Bishan library has one extensive collection of cookbooks and I love it!).
I wasn't a picky eater when I was a kid. I ate whatever's being served on the table and didn't complain. Heck, even the kids my mom babysitted last time didn't complain one bit (or maybe they were too afraid or tahu jaga diri...heh). That made my mum's life easier. I've always dreaded mealtimes because Aisyah can take almost 1.5hrs to finsh a meal if she doesn't like it and finish everything with 30min if the dish gets her stamp of approval.
Soooooooo I found this recipe in a cookbook (for kids actually) which sounded delicious and also simple to make. I prepared everything within 30min (cooking+baking time) and presented it to lil-miss-fussypot. I almost jumped with joy when she two thumbsup and asked for a second helping. Nowwwww that's REALLY rare. I heaved a huge sigh of relief and included the tuna bake in my breakfast menu list.
Tasty Tune bake

1 small red capsicum, seeds and white membrane removed
1 medium onion, roughly chopped
2 tablespoons olive oil
1 tablespoon tomato paste
½ cup milk
1 tablespoon plain flour
½ teaspoon salt
3 pinches of black pepper
1 x 425 g can of tuna
1½ cup cooked white rice
1½ cups grated cheddar cheese
Preheat the oven to 180°C. Put the capsicum and onion into a food processor and blitz it to a paste. Tip the paste into a small bowl. Heat the oil in a frying pan.
Carefully scrape the paste into the frying pan. Add the tomato paste and fry for about 10 minutes, stirring every now and then. Add the milk, flour, salt and pepper to the frying pan. Mix well and cook over low heat for a couple of minutes. Add the tuna, breaking up the chunks carefully and mixing it in very well. Spread the cooked rice over the base of the baking dish. Spoon in the tuna mixture and spread it over the rice. Finally, top with the grated cheese.
Bake into the oven and cook for 14 minutes, or until the cheese is golden. Remove the baking dish from the oven and divide it into 4 big portions.
Thanks for recipe. Shall definitely make it! But I still have Sutchi fillet and I think i'll use pasta or maybe couscous?
Caaan...but maybe you may want to season a bit more as I think sutchi fillet is a bit plain on its own.
Hmmm funny. The sutchi fillet I've made always tasted kinda salty actually! i just steamed it without adding anything at all~
